Bijou opened its doors on West 4th Avenue with a simple conviction: the bread on your table should be something you can feel proud to serve. Not mass-produced, not rushed — something made the way it always was, before industrial shortcuts made everything taste the same.
Over nearly three decades, that conviction has shaped everything we do. Our sourdough ferments for 36 hours. Our butter croissants are laminated by hand every morning. And the olive oils, aged balsamics, and small-batch preserves on our grocery shelves are selected the way we'd choose for our own pantry — with care, and with no room for compromise.
